I really like to cook and bake, and sometimes I find recipes that catch me with the title but lose me when I see what some of the ingredients are. So, I simply alternate healthier options in place of the ingredients that I know won't result in balanced energy and blood sugar... something we all should consider and easy to do.

Here's one I tweaked just a bit... try it out. I'd love to hear what you think!

Almond Butter & Blueberry Muffin Recipe

(grain free, gluten free, low-glycemic)

Ingredients:

  • 4 eggs whisked.

  • 1 1/2 cups almond flour

  • 1/2 cup natural peanut butter (substitute all-natural peanut butter)

  • 1/3 cup of organic cold pressed coconut oil

  • 1/2 cup ground hemp, flax or chia seeds

  • 1/4 cup plant-based protein powder.

  • 1/4 cup organic raw honey

  • 1/2 tsp. baking soda

  • 1/2 tsp. baking powder

  • 1/4 tsp. sea salt

  • 3/4 tsp. cinnamon

  • 1 cup organic fresh blueberries washed and drained.

  • 1/4 cup slivered almonds

Instructions:

1. Preheat oven to 350'f

2. In a large bowl combine all the ingredients except the blueberries. Mix well.

3. Fold in blueberries

4. Filled lined muffin cup tray and top with slivered almonds if desired.

5. Bake for 15-20 minutes

6. Store at room temperature for 1-3 days or refrigerated for a week.
